{"id":4,"date":"2006-06-05T08:18:57","date_gmt":"2006-06-05T12:18:57","guid":{"rendered":"http:\/\/www.aaronseaver.com\/?p=4"},"modified":"2006-06-05T08:18:57","modified_gmt":"2006-06-05T12:18:57","slug":"she-crab-soup","status":"publish","type":"post","link":"https:\/\/www.aaronseaver.com\/?p=4","title":{"rendered":"She Crab Soup"},"content":{"rendered":"<p>1 small yellow onion, finely diced<br \/>\n2 stalks celery, finely diced<br \/>\n4 ounces whole butter<br \/>\n4 ounces all purpose flour<br \/>\n1 pint heavy cream<br \/>\n1 pint water<br \/>\n2 pints whole milk<br \/>\n1 1\/2 teaspoons salt<br \/>\nSeveral dashes hot sauce<br \/>\n1\/4 pound crab roe<br \/>\n1\/4 pound jumbo lump crab meat<br \/>\n1 bunch fresh chives, finely diced<br \/>\n1 bunch scallions tops, finely diced<br \/>\nFine Sherry<\/p>\n<p>In a large, heavy bottomed soup pot, saute the onions and celery in the whole butter until translucent. Stir in the flour and cook over a low flame for approximately 5 minutes. Add a splash of Sherry then the cream, stir this then add the water and milk. Now add the salt, Tabasco and crab roe, bring to a simmer then add the crabmeat. Stir in the crab gently as to not break the lumps. If the soup appears too thick, add a little more milk and adjust the seasonings.
