Honey Poppy Seed Dressing

Serves: 4-6, Yield: 1.0 cup

Ingredients

    • 2/3 cup sugar
    • 1 teaspoon dry mustard
    • 1 teaspoon paprika
    • 1/4 teaspoon salt
    • 1 tablespoon poppy seed
    • 1/3 cup honey
    • 5 tablespoons cider vinegar
    • 1 tablespoon lemon juice
    • 1 teaspoon onion, minced (1/4 tsp. onion juice)
    • 1 cup canola oil ( can be any oil that doesn’t have flavor)

Directions

  1. Mix the dry ingredients together in a food processor or blender – sugar, mustard, paprika, salt, poppyseeds.
  2. Add – honey, vinegar, lemon juice, and onion to the dry ingredients.
  3. As the blades of the blender or food processor are spinning, slowly add the oil.

Cucumber-Tomato Salad with Buttermilk Dressing

Makes 8 servings (7 cups)

Total Time: 20 minutes

TOSS:

  • 4 cups seeded and thinly sliced cucumbers
  • 2 cups halved grape tomatoes
  • 1 cup thinly sliced radishes
  • Salt and black pepper to taste

WHISK:

  • 1/4 cup each sour cream and buttermilk
  • 1 Tbsp. white wine vinegar
  • 1 tsp. each chopped fresh dill and chives
  • 1 clove garlic, minced

Toss together cucumbers, tomatoes, and radishes; season with salt and pepper.

Whisk together sour cream, buttermilk, vinegar, dill, chives, and garlic until smooth; season with salt.

Drizzle dressing over vegetables and toss to coat.

 

 

Greek Pasta Salad

Mix the following ingredients:

  • Orzo
  • Crumbled Feta
  • Black Olives
  • Grape Tomatoes
  • Olive Oil
  • Fresh Parsley
  • Balsamic Vinegar

Champagne Vinaigrette

Mix the following ingredients:

  • 1 garlic clove finely chopped (or 1 oz. garlic infused olive oil)
  • 2 tbs. dijon mustard
  • 1/4 cup champagne vinegar
  • 2 tbs. lemon juice
  • 3 tbs. honey
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 cup grapeseed oil
    • reduce by 1 oz. if using garlic infused olive oil

 

 

Poppy Seed Vinaigrette

Ingredients:

1 cup olive oil
1/3 cup cider vinegar
½ cup honey
½ teaspoon onion juice
1 teaspoon Dijon mustard
1 teaspoon lemon juice
1 teaspoon lemon zest
½ teaspoon salt
½ cup poppy seeds

Directions:

1) Combine all ingredients except poppy seeds in a blender; puree until smooth. Stir in poppy seeds; chill at least 1 hour before serving.

Fruit Salad

Assorted fruit
2 cups pineapple juice
2 eggs
2 Tbsp. flour
1/2 cup fruit cocktail juice
2/3 cup sugar

Mix flour and fruit cocktail juice until smooth. Add beaten eggs, pineapple juice, and sugar. Cook until it comes to a boil, stirring constantly. When cool add 1 can pineapple, 1 can fruit cocktail and any fruit you like (bananas, oranges, etc.).

Chicken Salad

2 cups broth
2/3 cup vinegar
2 eggs, well beaten
salt

Boil chicken. Take chicken off of bone and grind. Put the following in a kettle and mix well.

Make a thickening of 2/3 cup of water and 1 teaspoon flour. Add thickening to broth mixture and stir all of mixture until it comes to a boil. Add chicken and pickles that have been chopped up (put pickles in according to taste) to the boiled mixture a little bit at a time.
